After the slaughter of the animal, according to the sanitary specifications regulated by the EU, those parts considered as not marketable or not suitable for human consumption are stored between 0-4 ºC, once the appropriate temperature has been reached, they will be taken to the cutting room whereby mechanical means or manuals it will cut or shred. The packaged product is frozen immediately and therefore must be kept in chambers with temperatures below -18º C for perfect conservation, avoiding breaks in the cold chain.
It can be presented in different formats: including only one of the parts of the animal (lungs, stomachs, heads, etc.), a combination (lungs and tracheas or stomach and intestines, etc.) or in MDM format (mechanically recovered meat). Depending on the species of origin and the parts or organs included, it will present different levels of protein, fat, moisture, or ash.
